Chocolate and Pecan Nuts Cookies
Here's my recipe for American cookies, discovered by chance during my stay in the States.
Ingredients:
- Flour type 00 310g
- Bicarbonate one and a half teaspoons
- Butter 170g
- Sugar 150g
- Brown sugar 50g
- Eggs 1 large
- Lemon zeste 10g
- Pecan walnuts 80g
- Milk 40mL
- Chocolate 100g (dark or milk chocolate)
- Vanilla extract 1 teaspoon
- Salt a pinch
for the icing:
- Icing sugar 180g
- Almond milk 25ml
Procedure:
Mix in a bowl 310g of flour, a teaspoon and a half of baking soda and a pinch of salt. Whip vigorously, in a second large bowl, 170g of butter softened with 150g of white sugar and 50g of brown sugar for at least a couple of minutes. We also add 40mL of milk and an egg and gradually incorporate the flour, until we obtain a homogeneous and compact dough. Finally, add the chocolate from a chopped stick and the Pecan nuts. Wrap the dough in the film and let it cured in the fridge for 30 minutes.
We resume the dough and on a clean surface we round it so that we have a cylinder ''biscuit'' 😂 to cut it into precise slices of about 1cm with a knife. Arrange the slices/biscuits in a baking pan covered with baking paper well spaced apart.
We bake in a hot oven and bake 15 minutes at 180°C in static mode. We bake and let it cool.
We prepare the icing, put the icing sugar and almond milk in a bowl and whip with force until we have a mixture with a dense and homogeneous consistency that we will use to decorate the cookies.
