Cacciucco alla Livornese
The famous fish soup famous throughout Europe for its unmistakable taste.
Ingredients for 4 persons:
- Squid 200g
- Cuttlefish 200g
- Octopus 200g
- Crustaceans 200g (prawns shrimps prawns)
- Tomatoes 400g
- Tomato pulp concentrate 50g
- Red wine 200ml
- Garlic 2 cloves
- Celery stalks 2
- Sage leaves 2
- Chilli pepper (optional)
- Olive oil 120ml
- Salt and pepper
We start by washing the tomatoes and 2 celery ribs let's cut them into small pieces and set aside, wash and check the fish.
In a large saucepan we sauté 120ml olive oil with 2 cloves of garlic and 2 sage leaves on a low heat.
Now we can add the chopped celery and the fish in this sequence, octopus, cuttlefish and squid leave for a couple of minutes and then add 200ml red wine and the 50g tomato concentrate and 100ml water and leave to simmer on a gentle heat for about 20 minutes.
Now add the 400g of tomatoes and leave to cook for another 10 minutes with the lid on.
Once the tomatoes have wilted, add the chosen crustaceans and cook for 5 minutes before serving, in the meantime we can toast some slices of bread to serve with the cacciucco.
