Piadine ai 7 Cereali
Here is my recipe to make at home seven cereal piadina, tasty and healthy with a high protein and fiber content.
Ingredients:
- 7 grain flour 250g
- Flour type 00 250g
- Water 125g
- Milk 125g
- Dry yeast 10g
- Butter 15g
- Salt 7g
In a bowl we mix and sift 250g of 7 grain flour with 250g of OO type flour, 10g of yeast and a teaspoon of salt. Combine 125g of milk and 125g of water and mix with a ladle. Then transfer to a clean, lightly floured surface and knead by hand. Add a tablespoon of butter, continuing to knead until the mixture is dense and elastic. Let's form a small ball, cover with the transparent film and let it rest for at least an hour. After the time of rest, we resume the dough and divide it into portions of 90-100g. We round off the portions and, on a clean and floured surface, with a wooden rolling pin, we roll out the piadine with a thickness of about 2-3mm. Heat a non-stick frying pan and cook the piadine, a couple of milks per side.
