Gourmet Pizza with aubergines e mascarpone cheese

Today I propose you a gourmet pizza with grilled aubergines, mascarpone cheese and tomato sauce
Ingredients for 1 pizza: (see the pizza dough in this blog):pizza dough
- Pizza dough 280g
- Aubergine 1
- Mascarpone cheese 60g
- Mozzarella 40g
- Tomato sauce 50g
- Oil evo 20g
- Fresh Basil
- Salt and pepper qb
Procedure:
We wash the eggplant well and slice it 3/4 mm thick and grill it on a plate.
Add to tomato with salt and oil 10ml
Weigh 280-300 g of pizza dough and spread it on a floured surface, forming a round base about 22-25 cm in circumference and about 2 cm high. Bake the base, without filling it, in a hot oven at 200-220°C for about 10-12 minutes. As soon as the base is swollen and slightly golden, we fill it with the sauce, add the grilled aubergines and 3 tablespoons of mascarpone cheese, the mozzarella and put it back in the oven for about 4-5 minutes. We take it out of the oven and decorate it with some fresh basil leaves and a drizzle of evo oil.
