Guacamole Sauce

Quick, easy and with lots of flavour to accompany meat or fish dishes or just to stuff tacos!

Ingredients for 4 people:
  • Avocado 2
  • Files 1/2
  • White onion 1/2
  • Coriander a tuft
  • Mature round tomato 1
  • Oil evo 10ml
  • Chilli pepper qb
  • Salt and Pepper and Cumin Powder
Procedure:

We wash the tomato and cut it into as small pieces as possible, slice and reduce to beat half a white onion and a tuft of coriander or parsley, cut in half two ripe avocados eliminate the seed and with a spoon we extract the pulp put it in a mortar, or crush it with a fork in a bowl together with the onion, tomato, oil 10ml, dried or fresh chilli pepper to taste, salt and pepper and cumin powder until you get a kind of cream, squeeze half of a lime and add the juice, let it rest in the fridge before serving.

Do not blend in the blender because it oxidizes and blackens in a short time and the seeds of the tomato acidify the sauce.
