Gundam's favourite Tempura
Tempura is a very famous Asian cooking method, and in Japan it is very popular with meat, fish and vegetables.

For the batter:
- Flour 00 100g
- Ice water 90ml
- Eggs 1
- For the dish
- Prawns 16
- Prawns 20
- Shiso Leaves
- Carrots 4
- Courgettes 4
- Courgettes 4
- Seed oil 1/2 litres
- Procedure:
In a bowl we put 90ml of very cold water, this is the secret to have a crunchy tempura!
Then add a whole egg and beat it with water, once well amalgamated we add the flour and with a whisk we whisk it slightly, just slightly unlike other recipes the batter should not be too homogeneous, indeed some lumps of flour creates crunchiness.
Now we have to keep it in the fridge in a cool place while we prepare our prawns and shrimps and let's shell them leaving only the tail to hold them if we want and eliminate the connective strip on the back.
Let's wash all the vegetables and cut them into strips about 7/8 cm long and 5mm thick, the central part of the courgette should be eliminated because it is rich in water and seeds.
Now that we have our vegetable strips we can start frying, in the fryer or in a pot pour the seed oil and bring it to temperature without exceeding 200°.
We pass in the white flour our vegetables just to dust them and then dip them in the batter and immediately in hot oil, to fry maybe making a few at a time, finished the vegetables we pass to prawns and shrimp.
We arrange everything on a tray with some frying paper and then we plate and serve with teryaki sauce.
