Hamburger Bread

Soft Hamburger Bread 

Today I propose my recipe for making sandwiches for tasty hamburgers.

Ingredients:
  • Flour type 0 w260 500g
  • Water 125mL
  • Brewer's yeast 15g
  • Salt 10g
  • Honey (or sugar) 25g
  • Milk 150mL
  • Butter 50g
  • Yolk 1 for garnish
  • Egg 1
  • Sesame seeds

Procedure:


Take the bread out of the oven and wait for it to cool before stuffing it.
In a bowl we put 125mL of lukewarm water and 150mL of milk and dissolve the brewer's yeast and a teaspoon of honey, as a starter to better activate the yeast. Let it rest for a few minutes and add the salt and 500g of sifted flour and start kneading by hand.
Melt the butter and add it together with a whole egg to the dough, continuing to knead. As soon as the mixture has reached a homogeneous consistency, let's move on a clean and slightly floured surface. Knead for at least 15 minutes, stretching and then folding the mixture back on itself and turning it 90 degrees. Repeat this operation several times, with force, trying to defibrate the dough until the butter is completely absorbed.
Fold the dough from the outside towards the inside until it forms a homogeneous but soft ball and let it rest for at least 2 hours in a container, covering it with a damp cloth.
After the leavening time, we take the dough again and work it a few more minutes, divide it to make sandwiches of about 100g each and shape it into a rounded shape with circular gestures of the wrist. We place the sandwiches on a baking plate covered with baking paper.
We brush the top surface with the yolk beaten with a spoon of milk and a pinch of salt and sprinkle with sesame seeds.
Let them rise for about 1 hour cover.

Preheat the oven to 220°C and bake for 18-20 minutes, until evenly browned.

Tips:

  • I advise you to check the baking of the sandwiches by turning them on the baking plate.
  • To have sandwiches of the same size, we must be precise in dividing the dough and weighing it.
  • We could stuff them with sliced tomatoes, salad, caramelized onions, crispy bacon, cheddar cheese, sauce and a 150g beef burger.
