Japanese Sweet Rice Mochi
A Japanese recipe, very popular and known all over the world.

Tradition has it that in Japan it is a good omen to eat it between New Year's Eve and the first day of the year.










This cake has changed a lot over the years, but originally it was white and filled with red bean jam.

Now it can be found in a thousand colors and with various fillings.

Ingredients:
  • Rice flour 160g
  • Water 170ml
  • Sugar 50g
Procedure:

It is a simple process, we pour rice flour, water and sugar into a bowl, mix by hand until the mixture is firm and homogeneous.

Now we have to steam the dough about 10 to 12 minutes.

Or we can put the ingredients directly into a saucepan, and boil them over a very low flame, continuing to turn them so that they don't stick. Once the mass has consolidated a little, it will still be a very soft dough, we can transfer it to a clean surface and sprinkle with potato starch.

Paying attention to its heat, we start kneading it until it is no longer sticky.

Now you have the dough ready to be filled, you can roll it out a little at a time and fill it like a dumpling, you can cut it into cubes or rectangles and sprinkle it with coconut powder, cocoa, sesame seeds, sugar, matcha tea, instant coffee and more...
