Lady's Kisses
Everyone knows these famous sweets from Tortona, which usually accompany a cup of tea or coffee, but not everyone knows the recipe don't be afraid with mine you will make a great impression among friends.

Ingredients for 80 single kisses:
- Butter 280g
- Sugar 280g
- Flour 00 280g
- Almond flour 280g
- Albumen 1 about 40g
- Salt 2g
Procedure:
In a bowl we put 280g of butter, 280g of sugar and with a whip we combine the two ingredients.
In another bowl we pour the egg white of a medium large egg about 40g and melt together 2g of salt.
Incorporate the egg white and 280g of almond flour with butter and sugar previously prepared, mix well and add 280g of sifted 00 flour, create an almond shortbread and let it rest 2 hours in the refrigerator to protect it from drafts.
After the rest we take our shortbread and roll it out regularly with a thickness of about 5mm with a rolling pin on a clean and lightly floured surface.
Now with a knife and a ruler we try to divide a small square 1cm x 1cm so as to have the same portions of dough, now one at a time roll them up on the palm of the hand and place them equally on a baking plate.
Cooking:
Once all the halves have been created, bake at 170° for about 12/14 minutes in a hot oven.
