Mezze maniche with anchovy cream sauce

A quick and tasty recipe for any occasion, mezze maniche with mascarpone cheese and anchovies. 




Ingredients x 4 persons:
  • Mezze maniche 320g (short pasta)
  • Mascarpone cheese 100g
  • Anchovies 4
  • Parmesan cheese 30g
  • Garlic and fresh parsley to taste
  • Milk 50ml
  • Olive oil 10g
  • Salt and pepper  
Procedure:

We boil a pot of salted water to cook the pasta.

In the meantime, put the mascarpone cheese, parmesan cheese, anchovies, milk, garlic and parsley in the blender and chop everything until the mixture is smooth and well blended, then transfer it all to a pan which we will also use to sauté the pasta, and bring to the boil.

Drain the pasta while it is cooking to finish it in the pan in the anchovy cream, serve and garnish with chopped fresh parsley and a grating of lemon zest if you like.
