Today we are in the Canary Islands, where this sauce called Mojo Rojo is very popular with meat or fish dishes because it has a smooth but strong taste.

Ingredients for 4 persons:
  • Garlic 1 clove
  • Red pepper 2 medium
  • Red hot peppers 2 (optional)
  • Round tomato 2
  • Fresh coriander a few leaves
  • Olive oil 25mL
  • Vinegar 1 teaspoon
  • Cumin powder 1 teaspoon
  • Paprika powder 1 teaspoon
  • Salt and pepper to taste
Procedure:

Wash the tomatoes, chillies and peppers, then toast them for about ten minutes in the oven on grill mode.

Once they have cooled, peel them and remove the seeds, cut them into small pieces and put them in a mortar together with the garlic and coriander and start to crush them. 

Add the spices and finally the olive oil and vinegar, mixing the sauce well. 

With just a few ingredients we have a different and exotic sauce to accompany our dishes.

Advice:
  • We can use the minipimer in the absence of a mortar. 
  • We can exclude the hot peppers for a more delicate sauce.
