Ingredients for 16 mini muffins
- Brown sugar 150g
- Flour 00 200g Alternatively wholemeal wheat flour
- Almond flour 80g
- Baking powder 16g (one sachet)
- Medium carrots 2
- Butter 80g
- Orange 1
- Whole eggs 2
- Sugar grains to taste
- Milk only as a binding liquid (if the mixture is too thick) qb
- Salt a pinch
Method:
Wash the carrots and peel the orange with a knife, blend them with the help of a blender.
Work in a bowl the butter 80g and 150g brown sugar and a pinch of salt with a whisk, add the 2 eggs, carrots and orange blended and mix everything. Add the 200 g flour sifted with 16 g baking powder and 80 g almond flour.
Mix with a spatula until the mixture is fluid but not liquid, now butter and flour the moulds or use silicone moulds, fill them leaving the space to make them grow during cooking at least one centimeter below the edge.
Sprinkle with grains of sugar or sliced almonds or hazelnut grains; in short, let your imagination run wild.
Baking:
In a preheated oven at 175° for 16/20 minutes in static mode.
