Pappardelle alla Grigia
Pappardelle alla grigia for lovers of black olives, here is an easy, quick and tasty recipe.

Ingredients for 4 people
  • Pappardelle 320g     
  • Cooking cream 125ml
  • Milk 100ml
  • Black olives 100g
  • Olive oil 30ml
  • White onion 1
  • Basil 10/15 leaves
  • Anchovies 3 (optional)
  • Freshly grated Parmesan cheese to taste
  • Salt and black pepper to taste
Procedure: 

Boil a pot of water, while in the blender put 100g of black olives, 15ml of evo oil, 3 anchovies, 10 basil leaves and 100ml of milk blend well to have a liquid and well mixed consistency.

In the meantime, if the water is boiling, throw in the pasta, if it is fresh it will only take a few minutes.

In a frying pan put 15ml of evo oil and the chopped white onion, let it fry gently and add the olive pesto and 125ml of cooking cream and let it cook for 5 minutes on a low flame.

A few minutes before cooking, drain the pasta and "finish" it in the pan.

Voilá here is your pasta alla grigia, let's serve it and sprinkle it with grated Parmesan cheese.
