Pumpkin Gnocchi
For gnocchi lovers, here are pumpkin gnocchi that are easy to make but very tasty.

Ingredients:
- Pumpkin 500g
- Yolk 1
- Flour 00 220g
- Potatoes 200g
- Salt 3g
Procedure:
Wash the outer skin of the pumpkin and cut it in half, remove the seeds and cook it in the oven at 180°C for 30 minutes.
Boil 2 potatoes in their skins in a pan of salted water, drain and peel them.
When the pumpkin is cooked, empty the pulp into a bowl with a spoon, add 200 g of peeled potatoes, one egg yolk and 3 g of salt.
Mash with a fork and mix everything together, transfer the mixture to a clean surface and add the flour a little at a time. Knead with your hands until you obtain a soft and not very sticky dough.
Divide the mixture, taking a little at a time, and form small loaves with a diameter of 2-3 cm and cut them into 3 cm long cylinders. To give the gnocchi the classic shape that allows the sauce to adhere to the surface, drag them one by one over the prongs of a fork, pressing lightly with the thumb.
