Salmon in crust

A few ingredients very quick to prepare but a unique taste...Salmon in bread crust.

Ingredients for 4 people:                          

  • Salmon 4 slices of 120/150g
  • Grated dry bread 100g
  • Oil evo 15ml 
  • Parsley 1 tuft
  • Garlic 1/2 clove
  • Salt and pepper qb


Procedure:

We portion the slices from a 120/150 g salmon fillet at your pleasure, we can leave or remove the skin, if removed the salmon will be lighter as the fat in the skin will not melt together.
It is very important to check that there are no bones left in the slices, you can find them by sliding your hand over the flesh, we can remove them with tweezers if there are any.
In a bowl we season 100g of breadcrumbs with 15ml of evo oil, parsley and chopped garlic, salt and pepper to your taste.

Let's stay well and go to sprinkle and compact our salmon slices trying to make them stick as much as possible.

For cooking we can choose two ways, the first one is in a non-stick pan with a drizzle of evo oil but you have to be careful to turn the slices gently because the bread tends to burn easily.
The second one is in the oven on a plate at 180/200° for about 20/25 minutes depending on the baking you want to get maybe in ventilated mode, I prefer this type of cooking healthier.

With a sharp knife we make an incision one centimetre from the tail without cutting the skin as well, we sharpen the skin of the tail and incline the knife horizontally and with a simultaneous movement we pull the skin and move the knife forward and voila.
