Shrimp Guazzetto with Cherry Tomatoes
A light and quick recipe with lots of flavour, a meeting of flavours between land and sea🦐🦐🦐🦐🦐🦐🦐🦐🦐🦐🦐
Ingredients:
- Prawns 250g
- Cherry tomatoes 100g
- Garlic and fresh parsley to taste
- Chilli pepper to taste (optional)
- White wine 50ml
- Tomato concentrate 15g
- Salt and pepper to taste
In a non-stick frying pan (recommended) put the olive oil with crushed poached garlic and let the oil heat for a minute with the chilli pepper (optional)
We add the halved cherry tomatoes to the pan and let them caramelise for a few minutes, now we can add the prawns, turn up the heat a little and sauté for two minutes.
Turn off the heat, add salt and pepper and sprinkle with freshly chopped parsley.
Tip:
Clean the prawns, preferably without the carapace if you want to eat the dish immediately.
We add half a glass of white wine and let the alcohol evaporate, cover for a few minutes and leave to cook over a very low flame adding the tomato paste and if necessary a little water.
