Muffin whit Almond and Peach
Soft Almond and Peach Muffins
Soft muffins with almond flour and chopped peaches, great for breakfast or a tasty snack.

Ingredients for 10 muffins
- Flour 00 250g
- Almond flour 90g
- Sugar 150g
- Baking powder 16g (one sachet)
- Butter 90g
- Oil 20g
- Medium peaches 3/4
- Whole eggs 3
- Sugar granules to taste for garnish
- Milk 50ml
- Vanilla/vanilla bean flavouring
- Salt a pinch
- Icing sugar for decoration qb
Procedure:
Wash the peaches and put them in boiling water for a few minutes and then transfer them to a bowl with water and ice.
Peeling them with a small knife or by hand should be very easy.
Work 80 g butter and 150g sugar, 20 g oil, 50 ml milk and a pinch of salt in a bowl with a whisk, add 3 eggs and the vanilla flavouring or the seeds of a pod.
We add the flour 250g sifted with the baking powder 16g and the almond flour 90g.
Stir with a spatula until the mixture is smooth but not liquid. Now butter and flour the moulds or use silicone moulds.
Fill them leaving space for them to rise during baking at least one centimetre below the rim and place 3/4 pieces of peaches in a disorderly fashion in the muffin mixture.
Sprinkle with grains of sugar or sliced almonds or hazelnut kernels and let your imagination run wild.
Baking:
In a preheated oven at 185° for 13/15 minutes in static mode.
