Strawberry Tiramisu
Delicate and fresh, you love Tiramisu but hate coffee... but there is a solution!
Strawberry Tiramisu, the ideal change from the usual flavour.
- Mascarpone 400g
- Eggs 3
- Sugar 90g
- Alkhermes 5g (optional) or strawberry syrup
- Fresh strawberries 250g
- Savoiardi 250g
Procedure for the mascarpone cream:
Divide the yolks from the egg whites and whip them in two separate, clean bowls with electric whips: whip the egg whites until stiff while whipping the yolks, adding 90g of sugar and a shot glass of rum until frothy.
We add 400 g of mascarpone to the yolk mixture and with a wooden spoon incorporate the whipped egg whites with gentle movements from the bottom to the top.
For the strawberry topping you have 4 possibilities according to your taste.
Choose one of the 4 solutions and create your own syrup.
1° Wash 200g strawberries and blend them with 30g sugar and 120ml milk.
2°In 200ml milk dilute 20ml strawberry syrup.
3°In 230ml cream, whisk 200g strawberries with 30g sugar.
4°F Blend 200g strawberries in 200ml water and 80g sugar and boil for 25min.
Now we can compose the tiramisu:
We can compose the tiramisu in a bowl or baking tin or in glasses as single portions.
Start with a layer of cream, dunk the ladyfingers in the strawberry syrup and continue alternating layers until the end, closing the circle with the cream, help yourself with a spatula licker, and a spoon.
How much should I soak the ladyfingers?
Usually you count 3 seconds, but you have to balance with the cream, if it is liquid you can soak them less, if it is compact you soak the ladyfingers more.
If you opt for glasses, help yourself to the cream with a pastry bag.
How to finish the tiramisu you can take inspiration from the vote below, crumble some ladyfingers, cut some slices of strawberries, add drops of syrup, white chocolate or meringues, some mint leaves would be nice
