Ingredients for 2 muffins:

  • English Muffins 2
  •  Eggs 2
  •  Salmon100g
  • Avocado 1
  • Salad and tomato
  • Crème fraîche qb
  • Chives qb


Procedure:

Let's boil a pot of salted water and a tablespoon of white vinegar.  With a wooden ladle, we create a vortex in the centre of the boiling water and break a whole egg inside the vortex. We cook for 3-4 minutes, continuing to turn with the wooden ladle to keep the vortex, so that we have a perfect poached egg with a soft heart. Cut the muffins in half and toast them in a non-stick pan or toaster.  Now we are ready to assemble: we spread one of the two halves with a spoonful of crème fraîche, two slices of fresh smoked salmon, the poached egg, a salad leaf, two slices of tomato and a few slices of ripe avocado. Dust with chopped fresh chives.
We accompany it all with a juice or a cappuccino and maybe some fresh fruit or yoghurt.

Tips:
  • Cooking poached eggs requires some practice. Be careful not to break the egg with a wooden ladle and to maintain a constant whirl.
