The Takoyaki
The Takoyaki
Very famous in Giapone as a snack but completely unknown to us, Takoyaki are a sort of spherical pancakes filled with octopus, I admit I have cooked and eaten many of them.

Ingredients for 2 people.
- Eggs 2
- White flour 00 200g
- Water 400ml
- Octopus 120g
- Mayonnaise
- Takoyachi or otafuko sauce
- Dehydrated algae Aosa or Anori
- Tuna (bonito) dried in slices
In a bowl we prepare the batter, break 2 eggs, add 400ml of water and 200g of flour and beat with a whisk to obtain a fluid and homogeneous mixture.
In the meantime boil the octopus in a pot of salted water once cooked and let it cool, cut it into cubes of one centimetre on each side.
We turn on the electric takoyaki plate and with a kitchen brush and some seed oil we oil all the spherical recesses where we will put our batter.
With a ladle we fill up to the brim the hollow and place a cube of octopus in the middle of it, now with the help of a spit or stick we move from its position the goal of takoyaki making a quarter of space to add a little new batter, repeat this operation until we have made a complete turn to each takoyaki and always adding some batter.
Once cooked we season with mayonnaise and sauce for takoyaki, dried tuna.
